J: Okay guys so the title of this post is pretty much the main ingredients for the two dishes we made for Andorra, because the dishes are literally called “Spinach with Raisins and Pine Nuts” and “Rice with Mushrooms.” Apparently Andorra is not creative with their side dish titles, and I am feeling uncreative in terms of trying to come up with new titles for them, so we’re going with it.
We chose to do these dishes instead of a “main dish” for Andorra because their entrées seemed to primarily involve things like boar, kid (as in the baby goat), pig spine, hambone, lamb, veal, and black pudding (not a dessert. look it up.). Sometimes all at once. It was a little bit terrifying and we are kind of poor and also not into consuming eighteen different kinds of meat at the same time, so we decided that we would do something a little unconventional and make two vegetarian side dishes instead. Turns out this was a pretty great idea!

This is the second time I’ve made this dal. The first time it was just as delicious, but I only got one dinner out of it before disaster struck. I had just moved into my apartment and been abandoned by my family and boyfriend, and I decided I would make some comfort food that would be easy, healthy, and would last a long time. What better than dal? It’s a one-pot meal (unless you do rice, which you should, and which makes it a two-pot meal), it has all sorts of good-for-you ingredients, and despite its simplicity, the spices that go into it, if done right, give it a lovely warmth that really spreads through your whole body.
So, I made this dal. I sat down on my couch with a nice warm bowl of dal and rice, and enjoyed it slowly. An hour after sitting down to eat, I got up to put away my leftovers, and as I was spooning the dal into a tupperware, SHOCK: there was a COCKROACH in the dal. Fortunately, it was already dead. I took small comfort in knowing that it had not gotten in there while I was cooking, since I’d kept the lid on most of the time and had barely taken my eyes off the pot, but I tearfully had to throw out all of the leftovers. Cockroach traps went up in my kitchen very shortly thereafter and I’ve not had another encounter since, thank goodness.
A few weeks ago, then, I decided to reconquer this dal and enjoy every last bit. Let’s get going with the recipe so you can enjoy it too!

Last week I decided that I really wanted pizza. So, I threw together a dough recipe that I’ve worked with several times before with delicious results (here!), and set it to rise for the requisite two hours. I came back to check on it… and it had done nothing. It hadn’t risen one bit. What?? I thought maybe it was the yeast I’d used; I’d only had it for about a month but figured it could be a fluke bad batch, so the next day I went to the store, got a new jar, threw together another batch of the dough, and, drumroll, same results. But this time I decided, what the hell, I’ll plastic-wrap it, put it in the fridge, and try to make pizza with it tomorrow just the same. And, as it turned out, the dough worked just fine, and as an added bonus, I accidentally discovered how to make deep-dish pizza! My theory is that since the dough didn’t rise, it didn’t get the air into it that it usually does, so it was much denser, and when it cooked it rose some but stayed dense. Delicious.
(Incidentally, I still don’t know why the dough wouldn’t rise, but it wasn’t my yeast, because I used the same stuff to make bread the same day and it worked beautifully. If you have any ideas on this, please let me know!)
