Lemon Poppyseed Scones

J:  Erik’s mother makes the most delicious lemon poppyseed muffins, and since I live so far away from them, I don’t get to enjoy them as often as I’d like.  Recently I was craving them, and decided that I would do an homage to her muffins in the form of lemon poppyseed scones!  I used this recipe from Vanilla Sugar (incidentally that recipe is dynamite in its original form as well) and tweaked it a bit to come up with these wonderful little pastries.

Pumpkin Scones

I love any and every food involving pumpkin.  So whenever fall rolls around, I get really excited, because that means I finally have an excuse to make things with pumpkin (also, pumpkin spice lattes from Starbucks. omg <3).

I bought two cans of pumpkin at the store a few weeks ago and immediately wanted to make pumpkin scones.  I altered the recipe a little because I have to admit that the pumpkin scones I’ve had commercially are a little too sweet for me, which is seriously saying something, so I left off the glaze and I omitted the cinnamon chips.  I also had the thought to add some cocoa powder, but was a bit hesitant because I didn’t want to overpower the pumpkin, so I ended up adding too little.  I’ve included my recommendations for amounts if you want it to actually come through.

English Tea Scones

Last night I came to the unhappy conclusion that there were not enough baked goods in my apartment (despite my boyfriend having sent me a care package of absurdly good cookies last week).  To remedy this, I decided that scones were in order, but I wanted to do more traditional, unfussy, and not-super-sweet ones, a) because of aforementioned cookies satisfying my sweet tooth for the moment and b) because I did not have any fancy ingredients on hand, and I am an impatient person and did not want to pop over to the supermarché down the street.

So, I found these!  They are reasonably quick and pretty darn easy, and also taste quite yummy if I do say so myself.
