White Chocolate Chip Pecan Muffins

J: I’ll come out and admit it up front: these muffins are kind of cheating.  They are actually the same basic recipe as these muffins, just with a few minor tweaks — why mess with a good thing, right?  Anyway, the coffee cake muffins were kind of delicious, in case you don’t remember or are just joining us now on our culinary journey (welcome!).  But we wanted something different and had some interesting ingredients lying around, so … this variation was born!  And who could complain?

Roasted Red Pepper Pesto Pasta

J: So, after a month-long hiatus in which EVERYTHING in the world was happening, thereby preventing us from being responsible bloggers, we come back to you with the assurance that no, we have not abandoned the blog — and here is an extremely alliterative recipe to make up for our absence!

I think I made this for the first time one or two years ago and since then it’s been something of a staple for us.  Recently we were trying to find the recipe and realized that we had never posted it here — so, obviously, that had to happen.  This is really easy and if you are anywhere close to as much of a pasta-holic as I am, you’ll love it.

Coffee-Nut Chicken

J: Happy sort-of birthday to us!  This is Nombudsman’s 100th post, and while we’ve been around for a little over a year already, we thought that #100 was a bigger milestone to celebrate.  I’m so excited that we’ve been around for this long, and I know that we’ve gotten a lot better at food photography, food writing, and of course food-making since we started — but we still have a long way to go, so thank you for reading this far, and I hope you’ll stay with us for the ride through the next 100 posts.

To celebrate post #100, we decided on this recipe, which I found over on Omnomicon before Nombudsman was even created.  It has such a long list of ingredients that I was a little intimidated by it at first, and so kept putting it off in favor of other less-scary meals.  But it continued to look so delicious to me that when Erik and I started trying to coordinate a dinner party, I already knew that this was what I wanted to make.  And so finally, make it we did!  Because it was for a dinner party, we had guests (yay friends!), so we were a little slipshod on pictures, but I think we did all right for ourselves. « Read the rest of this entry »
